     A quick and easy lasagna recipe! You can alter the vegetables as you prefer but try to take some things that will remain crisp on cooking. This basically becomes a complete meal so it is great for the days you are feeling lazy or have to appease famished kids 🙂

Ingredients:

  • 1 Zucchini
  • 1 Aubergine
  • 3 Mushrooms (raw)
  • 1 Onion chopped
  • 3 Cloves Garlic
  • 1 Bell Pepper
  • 2 Tbsp Olive oil
  • White sauce
  • Ricotta cheese
  • 5 Lasagna sheets
Method:
1) Boil 1 sheet at a time in an open kadhai (vessel/wok) for 15 mins.
2) Saute the vegetables with garlic making sure that the vegetables remain crisp. Add some salt and mixed herbs.

3) Take an oven dish and start by putting a layer of lasagna sheet followed by the vegetables, cheese, white sauce, tomato sauce and another sheet. Build layers like this and you can use upto 5 sheets.

4) On the top layer, put some white sauce and grated mozzarella cheese (pizza cheese) and bake in an oven set at 200C for 20-25 minutes. Serve hot.
