I love upma especially the white South Indian style one. For me it is a little filling but absolutely delish :). And this recipe is sooo easy and quick to make. Serve it hot with some yummy Coconut Chutney. Hope you guys like it!!

Ingredients:
  • 1 cup Sooji/Rava (roasted till light brownish in color)
  • 1 large / 2 medium sized Onions cut into strips length-wise
  • 2 – 3 Green Chillies (chopped or slit in middle – your choice)
  • 1 inch piece Ginger (grated)
  • 3 tbsp Oil
  • 2 cups Water
  • 1 tsp Mustard Seeds
  • 1 tsp Urad Dal
  • 1 tsp Chana Dal
  • Few Curry Leaves
  • Few Coriander Leaves
  • Few pieces of Cashew nuts (optional)
  • Salt to taste
  • 2 tsp Ghee

Method:
Heat the oil in a non-stick Kadhai/Wok and add the mustard seeds to it. Let them crackle.

Add to this the curry leaves and green chillies and let them crackle too.

Now add the dals and cashew (if you are using) and fry till light brown in color.

Add in the ginger and onion and sauté till the onion is transparent in color.

Now add the water and salt and bring to a boil.

Once the water starts boiling, add in the rava little by little and mix continuously so that no lumps are formed. The mix will start to get thick and bubble so be careful!! Lower the flame to medium heat, cover and let it cook for 3-4 minutes.

Now add in the ghee and coriander leaves. Mix well.
